“Budget-Friendly Minimalist Meals: Simple, Healthy, and Delicious!”

Minimalism has become an increasingly popular lifestyle choice for many people in recent years. One aspect of minimalism is simplifying our meals and reducing the amount we spend on food. However, eating cheap and minimalist doesn’t have to mean sacrificing flavor or nutrition.

In this article, we’ll explore some budget-friendly minimalist meals that are simple to prepare, healthy, and delicious.

1) Lentil Soup

Lentil soup is a classic staple meal for anyone looking to eat healthily on a budget. Lentils are packed with protein, fiber, iron, folate, and other essential nutrients. They’re also incredibly versatile and can be used in various dishes.

To make lentil soup:

Ingredients:
– 1 tablespoon olive oil
– 1 onion diced
– 2 medium carrots peeled and diced

– A cup of green lentils rinsed well.

1. Heat the olive oil in a large pot over medium heat; add onions until translucent.
2. Add carrots & celery; cook until vegetables become tender.
3. Add garlic; stir everything together before seasoning with salt & pepper to taste.
4. Sprinkle herbs as desired while stirring then pour in broth into the pot mixed with lentils after rinsing them thoroughly.
5.Bring it all to boil then reduce heat setting lowly covered letting it simmer for around another hour till soup thickens up like our beloved winter soups do!
6.Serve hot!

2) Stir-fried Vegetables

Stir-fried veggies can be an excellent addition to any minimalist meal plan because they’re easy to prepare and require few ingredients.

You can use whatever combination of vegetables you have available at home. Some great options include broccoli, bell peppers, onions, carrots, and mushrooms.

To make stir-fried vegetables:

Ingredients:
– 2 tablespoons olive oil
– 1 onion diced
– 3 garlic cloves minced
– A pinch of salt & pepper.
– Vegetables of your choice cut in sizes you prefer.
Instructions:
1. Heat the olive oil in a wok or pan over medium heat; add onions until translucent before adding garlic for another minute stirring occasionally.
2. Add vegetables to the pan and stir everything together with a pinch of salt & pepper till well coated all around each vegetable piece.
3.Cook on high flame until they are tender yet crispy enough to your taste preference.
4.Serve hot!

3) Chickpea Salad

Chickpeas are an excellent source of protein and fiber that can be used in many different dishes. One such dish is chickpea salad.

To make chickpea salad:

Ingredients:
– 1 can chickpeas rinsed and drained
– 1 large cucumber diced (optional)
– Cherry tomatoes halved as needed (optional)
– Fresh parsley chopped finely (optional)
Dressing Ingredients:
– Juice from one lemon freshly squeezed
– Salt & pepper to taste
– Olive oil if desired
Instructions:
1.Mix all the ingredients for dressing together in a bowl according to your preferred flavoring then set aside ready for use later once we have our salad ready!
2.Combine all other ingredients into one big bowl tossing them gently with hands to mix evenly before pouring over previously made dressing carefully without squishing any veggies too much while mixing around again lightly so it coats everything perfectly well.
3.Chill in fridge for at least half hour before serving cold!

4) Baked Sweet Potato

Sweet potatoes are an excellent source of complex carbohydrates, vitamins, minerals, antioxidants, and dietary fiber. They’re also incredibly versatile and can be baked, roasted, fried, or mashed.

To make baked sweet potato:

Ingredients:
– 1 large sweet potato
– 1 tablespoon olive oil
– Salt & pepper to taste
Instructions:
1. Preheat oven to 375 degrees.
2. Slice the sweet potato into rounds or wedges.
3. Toss with olive oil and sprinkle salt and pepper over it all evenly before placing on a baking sheet.
4.Bake in preheated oven until soft around 25 minutes depending on size of your pieces then serve hot!

5) Oatmeal

Oatmeal is an excellent minimalist breakfast option that’s filling, nutritious, and easy to prepare. It’s also incredibly versatile as you can add different toppings to it such as fruit, nuts, seeds, honey/maple syrup/stevia for sweetness purposes without adding any calories at all!

To make oatmeal:

Ingredients:
– Rolled oats
– Water
Optional toppings:
– Berries (strawberries/blueberries/raspberries)
– Seeds (chia seeds/flaxseeds/sunflower seeds/pumpkin seeds)
– Nuts (walnuts/pecans/almonds/hazelnuts).
Instructions:
1.Take a cup of rolled oats then mix them with two cups water ratio in pot till boiling gently stirring occasionally not letting it stick anywhere while cooking slowly over medium heat for about ten minutes until they’re tender enough but still retaining some crunchiness depending on preference.
2.Serve hot topped with any additional desired ingredients.
