5. Lemon Herb Roasted Chicken and Vegetables: Arrange chicken thighs on one side of a baking sheet lined with parchment paper or foil; add potatoes, carrots, Brussels sprouts or any other veggies you prefer on the other side; drizzle olive oil over everything; season generously with salt, pepper & herbs like rosemary/thyme/basil/oregano as per preference; squeeze fresh lemon juice over all ingredients including zested lemon peels scattered around before roasting them at 400°F (200°C) for about 40-45 minutes till chicken is cooked thoroughly & veggies have caramelized beautifully.
